Christmas Chocolate Mousse

Ingredients (2 bowls)

· 1 ripe avocado
· 1 cup of almond or hazelnut milk (also works with soy or cow’s milk)
· 1 cup of raw cocoa powder
· 4 large tablespoons of honey or agave (or maple) syrup
· 1 pinch of salt
· 1 teaspoon of vanilla (optional)

Method

To serve, put it in the fridge. Accompany with raspberries or strawberries and garnish on top with grated dark chocolate and a pinch of coarse salt.

These amounts give for 2 bowls like this one!

Ingredients (1 christmas tree)

· 1 package puff pastry
· 2 tablespoons chocolate-hazelnut spread
· 1 beaten egg

Method

1. Preheat oven to 200 degrees C.
2. Score puff pastry into 2 triangles.
3. Pull away excess pastry. You can use it for other puff pastry recipes.
4. Using an imaginary tree trunk as a guide, cut branches into the sides of both triangles.
5. Cover 1 triangle with chocolate-hazelnut spread. 
6. Place the second triangle on top of the one covered with chocolate-hazelnut spread.
7. Twist the branches.
8. Brush the tree with beaten egg.
9. Bake the tree until puffy gets golden (10 minutes).

Ginger & cinnamon butter cookies

Ingredients (30 cookies)

· 70 g sugar
· 130 g butter
· 1 egg yolk
· 220 g flour
· 1 teaspoon powdered cinnamon
· 1 teaspoon powdered ginger

Method

1. Preheat oven to 200 degrees C.
2. Mix sugar and egg yolk until gets a smoothie cream.
3. Add the rest of ingredients and knead until fully combined.
4. Roll the cookie dough into a log and wrap in parchment paper or plastic wrap and chill for at least 30 minutes in the fridge.
5. Cut into slices.
6. Bake until just turning golden – 10 minutes aprox.

Ingredients (1 christmas tree)

· 30 g sugar
· 250 g mascarpone cheese
· 80 ml milk 
· 3 eggs
· 50 g oat flour
· 1 tablespoon powdered cocoa

Method

1. For the mascarpone filling, mix the sugar and egg yolks until gets a smoothy cream. 
2. Add mascarpone, mix and chill in the fridge.
3. On the pancakes, mix the rest of the ingredients in a large bowl.
4. Heat a lightly oiled pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 3 tablespoons for 1 pancake, 2 tablespoons for 4 pancakes, 1 tablespoon for 3 pancakes and less batter for the rest. Brown on both sides. We want different sizes to get the christmas tree.
5. Place pancakes from biggest to smallest filling with mascarpone cheese and cover the tree with powdered cocoa.
